Beef Tacos

Typically you won’t see minced beef used in Traditional Mexican Tacos, you’ll see Carne Asada, this is grilled  steak marinated and cooked while you wait, the minced is more Tex Mex and what we Kiwis would recognize as good old beef tacos, so that’s what we’ll be doing for this recipe. It’s quick easy and fun for everyone to cook.

Ingredients:

1kg Minced Meat

1 medium Onion

2-3 Cloves Garlic

1-2 Tbsp Mexican Spice Mix

Oil for cooking

Ingredients to fill your tacos:

Store Bought Taco Shells/tortillas

Lettuce Shredded

Tomatoes diced

Coriander

Sour Cream

Avocados or guacamole

Cheese grated

Limes cut into wedges

Red Hot Kiwi Salsa

Directions:

Put oil into pan, add finely diced onion and garlic, cook for a couple of minutes on a med/high temperature  until the onion and garlic  start to go translucent then add the minced beef, break  up as it’s cooking so it’s fine, not big chunks of meat. Add Red Hot Kiwi Mexican Spice mix, trying as you go, start with 1Tbsp of dry mix and add more for flavour and heat to suit. Turn heat right down to keep warm while you get your other ingredients ready, make sure your taco meat is not watery otherwise your tacos will be soggy and fall apart.

Pop the taco shells into the oven for 2-3 minutes to warm, or for soft tacos, in a clean pan turn the heat up high, one at a time put a tortilla in, keep an eye on it, you will see it rise and bubble, using tongs flip the tortilla and cook quickly remove before burning! Repeat.

If your making for a large group put a clean tea towel down and as you cook each tortilla put on the tea towel and wrap to keep warm.

I like to serve family style for tacos and Most Mexican meals, this is one of the many reasons we Love Mexican food, it’s inclusive, it’s easy to make it fit a variety of dietary needs, and so satisfying.

Now build your taco!

Meat first then lettuce, tomatoes, and whatever you fancy finishing with salsa and coriander leaves and a wedge of lime squeezed over the top.

You can make this with any meat, chicken or fish using same ingredients. For vegetarian we substitute black beans and rice.

Try using lettuce cups using baby romaine lettuce instead of the taco or tortillas for a lighter alternative.
